- 12–14 turkey bacon slices
- 1 cup breadcrumbs (use almond flour for keto)
- ½ cup grated Parmesan cheese
- 4 oz cream cheese, softened
- ½ cup shredded cheddar cheese
- 2 tbsp melted butter
- 1 tsp garlic powder
- ½ tsp dried herbs (thyme or parsley)
- Salt and black pepper to taste
- 6–7 small cheddar cheese cubes (for centers)
Instructions
- Prep Onions: Preheat oven to 375°F (190°C). Cut tops/bottoms off onions and peel. Hollow out centers with a spoon, leaving 2-3 outer layers intact.
- Make Filling: In a bowl, mix breadcrumbs, Parmesan, cream cheese, shredded cheddar, butter, garlic powder, herbs, salt, and pepper.
- Wrap: Secure 1-2 turkey bacon slices around each onion with toothpicks.
- Stuff: Fill onions with cheese mixture, pressing a cheddar cube into each center.
- Bake: Place in a greased baking dish. Bake 30-35 mins until bacon is crisp and onions tender. Broil 1-2 mins for extra browning if desired.
- Serve: Let cool 5 minutes before serving warm.
