  • 45 fresh corn on the cob
  • 2 tablespoons olive oil or melted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha sauce
  • 1 teaspoon honey
  • 1/2 lime, juiced
  • 1/4 teaspoon paprika
  • 2 tablespoons fresh cilantro or parsley, chopped
  • 1/2 teaspoon chili flakes (optional)
  • Lime wedges for serving

Instructions

  1. Remove husks and silk from corn. Rinse under cold water and pat dry.
  2. Preheat air fryer to 375°F (190°C) for 3 minutes.
  3. In a small bowl, combine salt, black pepper, and garlic powder.
  4. Brush corn with olive oil or melted butter and sprinkle seasoning mix evenly over all cobs.
  5. Place corn in air fryer basket, ensuring not to overcrowd.
  6. Air fry for 10-12 minutes total, turning halfway through cooking until golden brown with some char.
  7. While corn is cooking, make the bang bang sauce by whisking together mayonnaise, sweet chili sauce, sriracha, honey, lime juice, and paprika until smooth.
  8. Once corn is done, transfer to a serving plate and immediately drizzle with bang bang sauce.
  9. Sprinkle with chopped cilantro or parsley and optional chili flakes.
  10. Serve with lime wedges for an extra burst of flavor.

Notes

For best results, select fresh corn with bright green husks and golden silk.

The bang bang sauce can be made up to 3 days in advance and stored in the refrigerator.

For easier eating at parties, cut cobs into 2-3 inch sections after cooking and saucing.

Adjust the sriracha amount to control the spice level according to your preference.
