- 1 lb ground turkey
- 1 cup cornmeal
- 1/2 cup buckwheat flour
- 4 cups turkey broth
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp sage
- 1 tsp thyme
- 1 tsp marjoram
- 1/2 tsp black pepper
- Salt to taste
- 1/4 tsp nutmeg
- 1/4 tsp cloves (optional)
- 1/4 cup all-purpose flour for dusting
- Oil or butter for frying
Instructions
- In a large pan, cook the ground turkey over medium heat until browned. Add chopped onion and minced garlic, sauté until softened.
- Stir in sage, thyme, marjoram, black pepper, salt, nutmeg, and cloves (if using). Cook for 2 minutes.
- Pour in turkey broth and bring to a boil. Gradually whisk in cornmeal and buckwheat flour, stirring constantly to prevent lumps.
- Reduce heat to low and continue stirring until the mixture thickens, about 15-20 minutes. It should be very thick and start to pull away from the sides of the pan.
- Pour the mixture into a greased loaf pan, smooth the top. Cool to room temperature, then cover and refrigerate for at least 4 hours or overnight until firm.
- Once firm, remove from the loaf pan and slice into 1/4-inch thick pieces. Dust each slice lightly with flour.
- Heat oil or butter in a frying pan over medium heat. Fry the slices until golden brown and crispy on both sides, about 3-4 minutes per side.
- Serve hot with your choice of sides, such as eggs, toast, or applesauce.
Notes
- For a gluten-free version, use certified gluten-free cornmeal and replace the all-purpose flour with a gluten-free alternative for dusting.
- Leftover scrapple can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
