  • 1 lb ground turkey
  • 1 cup cornmeal
  • 1/2 cup buckwheat flour
  • 4 cups turkey broth
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp sage
  • 1 tsp thyme
  • 1 tsp marjoram
  • 1/2 tsp black pepper
  • Salt to taste
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves (optional)
  • 1/4 cup all-purpose flour for dusting
  • Oil or butter for frying

Instructions

  • In a large pan, cook the ground turkey over medium heat until browned. Add chopped onion and minced garlic, sauté until softened.
  • Stir in sage, thyme, marjoram, black pepper, salt, nutmeg, and cloves (if using). Cook for 2 minutes.
  • Pour in turkey broth and bring to a boil. Gradually whisk in cornmeal and buckwheat flour, stirring constantly to prevent lumps.
  • Reduce heat to low and continue stirring until the mixture thickens, about 15-20 minutes. It should be very thick and start to pull away from the sides of the pan.
  • Pour the mixture into a greased loaf pan, smooth the top. Cool to room temperature, then cover and refrigerate for at least 4 hours or overnight until firm.
  • Once firm, remove from the loaf pan and slice into 1/4-inch thick pieces. Dust each slice lightly with flour.
  • Heat oil or butter in a frying pan over medium heat. Fry the slices until golden brown and crispy on both sides, about 3-4 minutes per side.
  • Serve hot with your choice of sides, such as eggs, toast, or applesauce.

Notes

  • For a gluten-free version, use certified gluten-free cornmeal and replace the all-purpose flour with a gluten-free alternative for dusting.
  • Leftover scrapple can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
