  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon butter
  • 1 egg (for egg wash)

Instructions

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, gently mix the sliced apples with both sugars, lemon juice, cinnamon, nutmeg, and salt. Let the mixture sit for about 15 minutes to allow the flavors to meld.
  • Line a 9-inch pie dish with one of the pie crusts, making sure to press it firmly against the bottom and sides.
  • Pour the apple mixture into the crust-lined pie dish, mounding it slightly in the center. Dot the top of the filling with small pieces of butter.
  • Cover the filling with the second crust. Trim any excess dough from the edges and crimp them together to seal.
  • Cut several slits in the top crust to allow steam to escape during baking.
  • Beat the egg with a tablespoon of water to create an egg wash. Brush this mixture over the top crust to give it a golden sheen when baked.
  • Place the pie on a baking sheet (to catch any drips) and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  • Allow the pie to cool on a wire rack for at least 30 minutes before serving.

Notes

  • For a firmer filling, use raw apples. For a softer, more uniform texture, pre-cook the apples.
  • To prevent a soggy bottom crust, consider blind baking the crust or adding a layer of breadcrumbs or crushed cookies.
