Ingredients

  • 1 pre-made pizza dough
  • 1/2 cup ricotta cheese
  • 1/2 cup pistachio pesto (store-bought or homemade)
  • 6 slices mortadella, thinly sliced
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • ¼ cup chopped pistachios
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 450°F (230°C) and place a pizza stone or an upside-down baking sheet in the oven to heat for at least 15 minutes.
  2. Roll out the pizza dough on a lightly floured surface to your desired thickness.
  3. Spread the ricotta cheese evenly over the pizza dough, leaving a small border around the edges.
  4. Spoon dollops of pistachio pesto over the ricotta cheese.
  5. Arrange the mortadella slices on top of the pesto.
  6. Sprinkle the shredded mozzarella and grated Parmesan cheese over the mortadella.
  7. Transfer the pizza onto the preheated pizza stone or baking sheet.
  8. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly.
  9. Remove from the oven and let cool for a few minutes.
  10. Sprinkle chopped pistachios and garnish with fresh basil leaves before serving.

Notes

  • For a more flavorful crust, consider making your own pizza dough.
  • Feel free to experiment with different types of pesto or cheese.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven at 350°F (175°C) until warmed through.
