Ingredients

For the crust:
• 1 1/2 cups graham cracker crumbs
• 1/4 cup unsalted butter, melted
• 1/4 cup granulated sugar
For the filling:
• 32 ounces cream cheese, softened
• 1 1/2 cups granulated sugar
• 1/2 cup creamy peanut butter
• 1 teaspoon vanilla extract
• 4 large eggs
• 1 cup heavy cream
• 1 cup semi-sweet chocolate chips
For the topping:
• 1 cup semi-sweet chocolate chips
• 1 tablespoon butter
• Reese’s Peanut Butter Cups, chopped

Instructions

  • Preheat oven to 350°F (175°C).
  • Mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan.
  • Bake crust for 10 minutes. Let cool completely.
  • Beat cream cheese until smooth. Gradually add sugar, beating until combined.
  • Stir in peanut butter and vanilla extract.
  • Beat in eggs, one at a time, just until combined.
  • Stir in heavy cream and chocolate chips.
  • Pour filling over cooled crust.
  • Place springform pan in a larger roasting pan. Fill with hot water halfway up the sides of the springform pan.
  • Bake for 55-65 minutes, until edges are set but center is slightly jiggly.
  • Turn off oven and leave cheesecake inside with door ajar for 1 hour.
  • Remove from water bath and refrigerate for at least 4 hours or overnight.
  • Melt chocolate chips and butter for topping.
  • Pour melted chocolate over chilled cheesecake and spread evenly.
  • Top with chopped Reese’s Peanut Butter Cups.
  • Refrigerate until chocolate is set before serving.
